Sweet, dark red, heirloom beets are topped with very dark, maroon-red foliage. Pick young leaves for a vibrant addition to spring salads while you wait for roots to mature.

Plant in enriched garden soil with good drainage after danger of 100° weather has passed. Leave at least 3" of space between each plant. Feed about once a month with a vegetable fertilizer. Harvest when ready by gasping stems and pulling straight up.
